1 T. olive oil
1/3 cup chopped onion
4 cups of peeled diced potatos
3 cups chicken broth
2 cups shredded cheese
2 cups of milk
heat oil and onion and potatoes and broth and simmer for 10-15 min. puree in blender until smooth. return to pan stir in cheese milk and seasonings cook on low until cheese melts.
