Pasta with Sausage, Tomatoes, and Artichoke Hearts

ingredients

1 T. extra virgin olive oil
1/2 c. sundried tomatoes
3/4 lb.-1 lb. mild or spicy Italian sausage
1 can of artichoke hearts in water
1 clove of garlic
1 1/4 c. chicken stock
penne pasta
parmesan cheese to top
small bunch of fresh basil
small bunch of fresh Italian parsley
Salt and Pepper to taste

cook penne pasta according to directions..
meanwhile, heat olive oil over med. high heat, cook sausage and remove, add artichokes and garlic to the same pan used for sausage, cook for 2 min. add stock and sundried tomatoes simmer for 8 minutes. Add pasta and sausage back into the pan and toss. Salt and Pepper to taste. Top with parmesan and fresh basil and parsley.

Pomegranate Salad

ingredients

1 bag mixed greens
1 bag spinach
seedless grapes
2 large grapefruits peeled and cut up
1 can mandarin oranges
2 avocados peeled and cut
seeds from 1 large pomegranate

dressing

1/2 c. sugar
1 tsp. dry mustard
1 tsp. salt
1 tsp. paprika
1/2 T. poppy seeds
1 T. grated onion
1/2 cup red wine vinegar
1 c. oil

shake very well and let it settle in the fridge for at least a couple hours.


Shrimp Soup

ingredients

1/2 c. sour cream
1 tsp. cumin
1 3/4 tsp. kosher salt
1 T. olive oil
2 garlic cloves
1 can diced tomatoes
1/4 tsp. pepper
2 jalapenos
1 can hominy
1 lb. medium shrimp (approx. 30)
1/2 cup cilantro
1 lime

combine sour cream, cumin, 1/4 tsp salt.. cover and place in fridge.
heat oil, add garlic, tomatoes, pepper and the rest of the salt. bring to a simmer.
cook for 10 min. add jalapenos and hominy. simmer for 5 more minutes
add shrimp, simmer for 3-4 more minutes.
top with cilantro and sour cream mixture and squeeze lime on top.
(hint: if it seems too thick add some chicken stock until it's to your liking.)

Peasant Bread

ingredients

1 T. yeast
2 c. warm water
1 T. sugar
2 tsp. salt
4 c. flour

dissolve yeast in water, salt and sugar. (For Italian flavor, add 1 T. Italian seasoning.) Mix well. Place in oil covered bowl-let raise 1 hour. Divide into 2 rounds. Put on a cookie sheet geased with olive oil and sprinkled with corn meal. Let raise for one more hour. Brush tops with melted butter. Cook at 425 for 10 minutes then reduce heat to 375 and cook for 15 minutes. Brush with butter again when done and dip in oil and balsamic vinegar.

Spinach Florentine Salad

ingredients

1 bag spinach, chopped
1/2 pkg. orzo pasta cooked
1 can sliced olives
1 small tomato, diced
2 T. capers
1/2 c. pine nuts
2 chicken breasts grilled
fresh parmesan cheese

Toss first 7 ingredients together. Top with sliced grilled chicken and garnish with parmesan cheese.

Dressing

1/4 c. olive oil
1/4 c. orange juice
1/4 c. sugar
1/2 t. ground mustard
1 T. Italian dressing mix

combine all ingredients in a tupperware and shake VERY well. Pour over salad. It's better if the dressing has a couple hours to rest before pouring over salad.

Cranberry Granita

ingredients

2 c. cranberry juice cocktail
1/3 c. sugar
1/4 c. fresh lime juice
1/4 c. sprite

whisk juice and sugar over med. heat until sugar dissolves. Pour in 13x9 dish and completely cool. Whisk in lime juice and sprite. Freeze and scrape every 2 hours for 6 or 7 hours. serve!

Penne w/ Spinach Sauce

ingredients

1 lb. whole wheat or multi-grain penne pasta
3 cloves of garlic ( you may want to only use one or two.. 3 makes it pretty garlicky.)
2 ounces of goat cheese
1 ounce cream cheese
3/4 tsp salt
1/2 tsp pepper
6 ounces of fresh spinach leaves

cook the pasta according to directions, put garlic, goat cheese, cream cheese, salt, pepper, and 1/2 the spinach in a food processor and blend until creamy. blend pasta with the sauce ( you may need a little bit of pasta water to thin it down so don't pour it down the drain!) Put the rest of your spinach in a bowl and place the pasta mixture on top. Top the dish with parmesan cheese.

Minestrone Soup

ingredients

carrots
zuccini
1 can diced tomatoes
6 cups chicken stock
1 1/2 cup small shell pasta or macaroni
1 can garbonzo beans
1 can green beans
meatballs (see below)

combine all ingredients except meatballs. simmer on medium/high until hot and the noodles are cooked through (about 10 minutes) place meatballs at the bottom of each bowl and pour the soup on top.

meatball recipe
1/2 lb. mild Italian sausage
1/2 lb. ground beef
1 tsp. dried parsley
1/2 c. Italian bread crumbs
1 tsp. salt
1/4 c. milk
1/2 tsp. worchestershire sauce
1 egg
1/8 tsp. pepper
1 T. dried onion flakes

combine ingredients, roll into small balls and place on cookie sheet. bake at 350 for 20 minutes.
